Tokyo Confidential” was crowded with guests from 6:00 p.m., the opening time. People sipping cocktails alone, businesspeople on their way home from work, or people enjoying the view of Tokyo Tower on the terrace.
The people who visit us have their own reasons for coming, including regular customers who visit every day, people who like bars, and tourists from overseas who happen to find this place on social networking sites,” he said. We opened this bar with the goal of making it a comfortable place for everyone, and we already feel like we’re getting closer to what we want.
The bar’s founder, Holly Graham, said, “I’m very happy to be here.
Holly is the managing editor of DRiNK Magazine, the leading source of information on the bar industry in Asia, author of Cocktails of Asia, and was ranked #9 in the Bar World 100, 2023, the 100 most influential people in the bar industry, He is a leading figure in the Asian bar industry.
Although Holly has lived in Hong Kong for 10 years and previously lived in Korea and Thailand, this is the first time she has established a base in Japan.

Even though I have visited Tokyo at least 20 times, it was a big decision to leave my beloved Hong Kong. However, if our partner company could find the best location here in Azabu Juban and provide visa support, we could not pass up this opportunity.
Tokyo has many internationally renowned bars such as “The SG Club” and “Gold Bar at EDITION” that attract many people from all over the world, as well as many lesser-known bars that are open and welcoming to all.
However, I felt that there were not many places that combined both aspects, so I hope that Tokyo Confidential can become such a bar.
The current core menu includes nine cocktails, including two low-alcohol and one non-alcoholic. It shows the desire to create a comfortable place for those who are not strong drinkers or those who cannot drink.
The restaurant offers not only beer, but also champagne by the glass and non-alcoholic sparkling wine, so no matter who you are, you will never have trouble finding the drink of your choice.

There is also a great selection of food for those who want to enjoy a good meal at the bar.
The menu was created by Chef Daniel Calvert, who has two Michelin stars and has been ranked in Asia’s 50 Best Restaurants.
She has known Daniel, who was appointed head chef of Hong Kong’s Belon in 2016, for some time and is a mentor to Holly.
When I was about to open a bar in Tokyo, as he was, I jokingly asked him, “Can you think of our food menu?” When he consulted with the company, it was realized with a twofold response.

In order to keep Tokyo Confidential a comfortable place for everyone, as a founder, Holly says the most important thing is to keep “Tokyo Confidential” a happy team.
I am sure that the atmosphere among the members will be conveyed to the guests as well. The bar industry has frequent turnover of people. Even when I was in Hong Kong, all the staff changed except the owner of my favorite bar, which made me feel uncomfortable. First of all, the team working here must be happy. That should create a comfortable space for guests.”
Guests from all over the world will continue to flock to this bar for the fun of being invited to a friend’s house party and some of the best cocktails in Asia.
